make your own buttermilk using nut milks, rice milk, soy milk, or regular cow's milk.

  1. make sure whatever milk you are using is unsweetened.
  2. combine one tablespoon vinegar or lemon juice (i like vinegar better) with one cup milk of your choice.
  3. mix lightly with a whisk.
  4. let the mixture stand for 10 minutes - you may see curdles.
  5. use as directed.
